My setup is a Nord Electro 4 HP, running it through a Yamaha MG10XU
The issue I’m having is that the piano samples sound absolutely gorgeous through my Audio Technica headphones that are plugged into the headphone jack of the MG10XU, but when I record the audio output by the mixer it sounds lifeless in comparison - here’s a short demo I recorded:
Like when I listen through the headphones the piano sounds nearly real, but the recorded audio sounds way more flat and lifeless - what gives?
I am listening through AirPods from my iPhone for the video to be fair, but I feel like that shouldn’t make a difference - it’s not like acoustic piano recordings stop sounding as rich when I listen to them through AirPods.

I have the same mixer but when I record I plug in my Nord Stage 3 directly into my focusrite. Next time I record I’ll do an A/B comparison going direct and through the mixer.
One thing that comes to mind is checking the settings on your mixer. I’m sure you’ve done all that; but there’s lots of ways to condition the signal through that mixer.

Almost 100% sure you haven't panned the two mixer channels left/right.
