The piano samples don’t pan frequencies — they pan notes.
The lowest notes on a piano contain harmonic frequencies that overlap with the highest notes of a piano, but they will still be panned to opposite sides.

I had the two microphones in mind capturing the piano sound, but of course, they don't select frequencies.
This might nevertheless do what TO wanted.
This option does not exist for the Synth engines. The only way to go there is with filters or EQ for two identical engines, and panning those hard left and right, as mentioned.
Which of course does not necessarily pan individual notes (due to harmonic partials), but it will at least simulate a kind of stereo panning.
Incidentally, this is more or less what they did for those horrible-sounding "electronically reprocessed for stereo" early (60s/70s) reissues of mono records. Except it was applied to a whole mix.
